It costs less for a formal plate service supper at most hotels than it does for a 'sandwich and dessert buffet-style'. Twice as much for the sandwich and dessert trays. Hrm. That's new. And unexpected.

Er, no.
Knowing how much *I* would drink if there was an open bar, and knowing that Noah alone could probably dry out the open bar, rather than *not inviting* a bunch of people, I figure that it's probably a better idea *not* to have an open bar. A loonie-twonie bar, perhaps. But I really don't feel like having an open bar if I'm not allowed to say 'please give us money' on the invites.

Big surprise #4: It's International Talk Like A Pirate Day! Yarrr!

A nice compromise, IMHO, between the fiscally and liabilityly (?) irresponsible open bar and the chintzy and miserly pay bar is to give everyone two free drinks tickets and tell 'em that they're on their own after that. It's more of a fixed cost, and, I think, strikes a balance between hospitality and thrift. Of course, I'm biased 'cause that's what I did. :)

(a very cunning variation on this was used by friends of mine yonks ago...the arrangement with the facility was that the couple would pay for all tickets that were cashed in at the bar. However, the tickets were handmade and featured Grade 3 pictures of the bride and groom, with some sort of sappy message and the date. So of course people kept the tickets as souveniers, and the couple saved a bunch of money.)
